HOW TO MAKE YOGURT - COW GOAT OR SOY, FIRST THING IS Bring your milk to almost a simmer. When a skin forms and its' kind of vibrating on top, turn heat off. Let it cool to BODY TEMP. That HEAT did you a favor; it killed all the bacteria in that store milk, or milk from your own cow or goat.
OK, you have a heating pad? A yogurt maker? A rice cooker with a low setting? Any of these works great or fourth choice, use oven set on low, on open oven door, towel draped all around it so metal doesn't BURN the container, cause a hot spot. And cover it. I have used an oriental rice cooker that has low settings or a heating pad, kind you use on a sore knee, drape it inside crock pot. But that actually gets too hot, so I put a kitchen towel inside that crock, UNDER the receptacle and set it to low or in case of rice cooker, the "JUST KEEP RICE WARM" setting. Lid won't close but I drape another towel over the top of receptacle which holds my yogurt. If you are using the heating pad, again you'll be draping your pot with a towel and covering it.When the milk has arrived at body temp, stir in 1/4 cup of your old quart of store yogurt (most brands are 32 oz for under 3$ now in 2019. WHOLE cow's Milk is 2$ a half gallon at Krogers, (800 stores across USA) BUY that size but use a quart for your batch. One quart is valued at 1$. 1 quart of yogurt will be your usual batch, so $1 cost for each batch. To mix I use a wire cooking whisk or a fork.
METHOD: Mix old yogurt with new milk well, that's your starter. You just put some CULTURE into your WARM MILK. Then set the yogurt container on the heating pad in dish area of cupboard. shut cupboard door, no drafts. My dishes are stacked about ten high so the yogurt container and the heating pad fit. Or I get a thrift store yogurt maker which is basically a great idea, only thing, FOUR CUPS is the limit. hate that! A CROCK POT set on warm might work. But mine was too hot. It killed the culture. Try, but make sure you test it for a few hours with some water in it before you try with milk. I also use a heating pad put it in the crock pot which is turned OFF... layer in some toweling. put a lid on the whole affair, leave overnight.
Save your old yogurt containers and lids as children need bright packaging for comfort or they don't trust their ole Mom. Do the whole yogurt making thing while they're at school or AFTER they went to sleep. Get up at 4 am to turn off heat, put whole thing in fridge.
